Leftover rice and dal put to good use – very tasty and nutritious

  • Heat ghee in a deep non-stick pan, add cumin seeds, bay leaves and cinnamon and saute till fragrant. Add ginger-garlic paste and saute for 1 minute.

Ingredients

  • Ghee 1 tbsp
  • Cumin seeds 1 tsp
  • Bay leaves 2
  • Cinnamon stick ½ inch
  • Ginger-garlic paste 2 tsps
  • Salt to taste
  • Sugar 1 pinch
  • Green chillies, chopped 2
  • Red chilli powder 1 tsp
  • Turmeric powder ½ tsp
  • Garam masala powder ½ tsp

How to Make Egg & Paneer Khichdi (Stepwise Photos)

Method

  1. Heat ghee in a deep non-stick pan, add cumin seeds, bay leaves and cinnamon and saute till fragrant. Add ginger-garlic paste and saute for 1 minute.
  2. Add rice and dal and mix. Add salt, sugar, green chillies and mix well. Add turmeric powder, red chilli powder and ¼ cup water and mix well. Cook till the mixture reaches khichdi consistency.
  3. Add cottage cheese cubes and mix gently. Cook for couple of minutes more.
  4. Add egg cubes and mix. Sprinkle garam masala powder and mix lightly.
  5. Transfer into a serving bowl and serve hot with yogurt or raita of your choice.
