Aloo Baida Roti

ingredients

    4 leftover Chapatis
    4 eggs
    Salt and pepper to taste
    2 Boiled potatoes , cut into cubes
    2 tbsp oil
    2 tsp cumin seeds
    1 tsp garam masala
    2 tasp coriander powder
    1 tasp chilli powder
    1/2 tsp turmeric powder
    1 1/2 tsp lemon juice
    salt to taste
    1 tbsp finely chopped coriander

preparation method

Heat a pan on a medium flame.
Whisk the eggs and add salt and pepper to them.
Drizzle the pan with some oil.Pour some beaten egg (approx.. one egg) on the pan and swirl as if making an omelette.
Place the leftover Chapati on top of the egg and flip and coat with another layer of egg.Drizzle oil and cook till egg is cooked.
In another pan heat 1 tbsp oil and add the cumin seeds. Add all the dry masalas to this. Let them cook
Now add the potatoes and cook for 4 – 5 minutes.
Add the lemon juice, salt and coriander,mix well and cook on a medium flame for 2 to 3 minutes,while stirring occasionally.
Stuff the baida rotis with the aloo mixture. Make it into a roll and enjoy.
