Amritsari Chole is fast food recipe that comes from Amritsar in Punjab.
Chole - Chickpeas :- 500 gm
Teabag :- 1
Amla :- 1
Kali Elaichi :- 6
Salt :- To taste
Black Salt :- 1 tsp
Green Chilies (chopped) :- 4
Tomato (chopped) :- 2-3
Ginger (chopped) :- 1
Green Coriander (chopped) :- 3 tsp
Onion (chopped) :- 1
Mango Powder – Amchur :- 1/2 tsp
Garam Masala :- 1tbsp
Red Chilies :- To taste
Coriander Powder :- 2tsp
Ghee :- 100 gms
Bay Leaves :- 2 pieces
Tava or Fry Pan
Let the chickpeas soak in waterovernight.
In a pressure cooker,add tea bag, chole, Black Elaichiand saltalong with ample water. Boil for 30 minutes.
Take out tea bags after cooking the Chole in pressure cooker
On a pan, roast all dry masalas and prepare a rough powder.
In hot oil, fry onions till they turn brown.
Add garam masala, tomatoes and chole keeping water separately in the pan and mix it for two minutes.
Add the roasted dry masala.
Add Amchur, Ginger and black salt to make it more tickling.
Add little water to the boiled chole and let it boil for 10 minutes.
Add 2 tsp coriander powder and if the curry looks too thick then add some more water in it.
Garnish it with some coriander and green chilly.
Serve hot with naan or rice or roti.
