Bangla khichdi is a traditional Bengali recipe which is easy and quick to prepare.
Rice (soak for 30 minutes):-½ cup
Masoor dal (soak for 30 minutes):- ½ cup
Chana dal (soak for 30 minutes):- ½ tbsp
Carrot (diced):- 1
Peas (shelled):- 1 tbsp
Onions (peeled):- 6
Baby potatoes:- 5
Green chilies (chopped):- 3
Bay leaf:- 1
Green cardamoms (crushed):- 2
Cloves (crushed):- 2
Cinnamon (crushed):- ½ inch
Cumin seeds:- ½ tsp
Ginger (grated):- ½ tsp
Garlic (grated):- ½ tsp
Garam masala :- ½ tsp
Turmeric powder:- ½ tsp
Hot water:- 3 Cups
Deep bottomed pan
Drain both the rice and dals. Transfer them in a colander and set aside.
In a deep bottomed pan, heat ghee and put cumin seeds, crushed spices and bay leaf. Sauté till crackles.
Mix the chilies, garlic and ginger into it. Stir-fry for two minutes.
Put the potatoes and onions into it. Fry for another 3 minutes.
Combine the peas, carrot, garam masala, salt and turmeric powder into it. Fry for a minute.
Add the rice and dals. Gently stir for two minutes.
Pour hot water and stir well. Allow this mixture to boil. Cook covered and simmer till done.
Switch off the heat and add 1 tsp. of ghee and garnish with chopped mint/coriander leaves.
Garnish with chopped mint/coriander leaves and serve hot with chutney or curd.
