Brinjal dal is a slightly tangy dal with spices and it goes well with biryani or steamed rice.
Brinjals (cut into big chunks):- 250 gm
Lentils: - 500 gm
Turmeric powder- ½ tsp
Salt: - to taste
For the tempering
Mustard oil: - 4 tbsp
Garlic cloves: - 8
Dry whole red chilies: - 4
Pressure cook the dal for 1 whistle and then allow it to cool.
Mix the salt, turmeric powder and brinjal pieces. Cook for an additional two whistles.
Heat mustard oil in a wok and then add red chilies and garlic.
Combine the dal in it and cook for another few minutes.
Serve hot with roti or steamed rice.
Garnish with coriander leaves and serve hot with biryani or steamed rice or roti.
