Brinjal Dosa

Brinjal Dosa makes a healthy breakfast or snack time recipe.

ingredients

    Brinjals (sliced):- 2

    Dry coconut:- 2 tbsp

    Uncooked rice (soak overnight):- 1 cup

    Dried red chilies:- 2

    Cumin seeds:- 1 tsp

    Brown sugar/jaggery:- 1 tbsp

    Salt:- To taste

    Tamarind:- 1 tsp

Blend rice, red chilies, dry coconut, jaggery/brown sugar, jeera, salt and tamarind.

Put the brinjal slices in a bowl filled with water.

Heat a pan and spread little oil on it. Arrange the brinjal slices.

Pour the prepared dosa batter on a pan and spread evenly.

Spread another tbsp of oil and cook covered.

Remove the lid and flip the dosa. Cook the other side.

Serve hot.

Serving Suggestions

    Serve hot with or without chutney.
