An appetizing meal for broccoli lovers.
Flank or sirloin (sliced thinly across the grain):- ¾ pound
Broccoli florets: - ¾ pound
High-heat cooking oil: - 2 tbsp
Garlic cloves (minced or smashed):- 2
Cornstarch (dissolved in 1 tbsp of water):- 1 tsp
For the beef marinade:-
Soy sauce: - 1 tsp
Chinese rice wine: - 1 tsp
Cornstarch: - ½ tsp
Freshly ground black pepper: - 1/8 tsp
For the sauce:-
Oyster sauce: - 2 tbsp
Chinese rice wine (or dry sherry):- 1 tsp
Soy sauce: - 1 tbsp
Chicken broth: - ¼ cup
Large frying pan/Wok
In a bowl, combine all the marinade ingredients of beef.
Then put the beef slices and mix well until coated. Keep aside for 15 minutes.
For sauce, mix all the ingredients in another bowl.
Blanch the broccoli in a pot of boiling salted water and cook it until soft. Thoroughly drain.
Heat a large wok or frying pan on a high flame until a bead water sizzles and immediately evaporates.
Add the cooking oil and then swirl to layer.
Put the beef and spread it out over the surface of pan or wok immediately in one coat.
Fry the beef undisturbed for single minute and then flip it.
Add garlic and keep frying for another minute.
When beef turns pink, pour the prepared sauce.
Mix the blanched broccoli and allow this mixture to boil.
Transfer in the dissolved cornstarch and continue cooking. Stir until the sauce thickens and boils.
Spread little sauce over broccoli beef before serving.
