Cauliflower Purée is a delicious combination of cauliflower, butter and chicken stock.
Cauliflower (stem trimmed of leaves, florets roughly chopped) :- 1
Sour cream :- 3 tbsp
Chicken stock :- 1 cup
Salt :- to taste
Unsalted butter (softened) :- 1 tbsp
Pepper :- to taste
In a medium saucepan, mix chicken and cauliflower. Allow this mixture to boil on a high flame.
Decrease flame to a simmer and cook until cauliflower is cooked.
Take cauliflower mixture into a blender with the help of slotted spoon.
Mix a few tbsps. of the cooking liquid to it and blend for around 20 seconds to smooth.
Add butter and sour cream. Blend for another 10 seconds.
Season with pepper and salt.
Season with salt and pepper and serve hot.
