Chana Spinach Rice


    1 cup chickpeas (kala chana), soaked and boiled

    ½ cup chopped spinach (palak)

    2½ cups boiled rice

    2 tsps oil

    ½ cup sliced onions

    1 tsp ginger-garlic paste

    ½ cup chopped capsicum

    ½ cup chopped tomatoes

    ½ tsp turmeric powder

    1 tsp red chilli powder

    1 tsp coriander-cumin seeds powder

    Salt to taste

preparation method

  1. Heat oil in a non-stick pan; add onions and sauté till they turn light brown in color.
  2. Add ginger-garlic paste, capsicum and tomatoes and sauté for 2 minutes.
  3. Add spinach, turmeric powder, red chilli powder, coriander-cumin seeds powder, salt and 2 tablespoons water and cook for 2-3 minutes.
  4. Add chickpeas and rice, mix gently and cook for another 5 minutes.
  5. Serve hot.
