Chocolate and Beetroot Muffins


    2 1/2 cups all purpose flour
    1/2 cup cocoa powder
    1/2 tsp baking soda
    1 tsp baking powder
    250 gms dark chocolate ( cut into cubes)
    75 gms butter
    2 eggs
    1 cup sugar
    4 tbsp curds
    1/2 cup milk
    1 cup beetroot ( grated)


    Chocolate frosting
    Chocolate chips, candy

preparation method

1-To make the muffins, preheat the oven to 180ÂșC. Line a muffin tray with 10 paper cases.
2-Sieve flour, cocoa powder, baking soda and baking powder.
3-Melt chocolate and butter. ( on a double boiler or microwave)
4-Beat eggs and sugar in a large bowl till creamy .
5-Add the chocolate mixture, curds, milk.
6-Fold in the flour, add the grated beetroot and mix well.
7-Spoon into the paper cases and bake for 25 minutes or until just springy to the touch. Allow to cool.
8- Pipe chocolate frosting and Garnish with chocolate chips and candies.
