Citrus Shrimp Cocktail
Citrus shrimp cocktail is a light and healthy drink.
Jumbo shrimps: 1 pound
Olive oil: 1-2 tablespoons
Mint leaves: 10
Sparkling cider, wine or soda
Select a grapefruit and orange of considerable size.
Squeeze the fruits to extract the juice and discard the membranes.
Using a small pair of kitchen scissors, cut off the legs of the shrimp and spray a little oil on the body to avoid excessive absorption of oil.
Heat a frying pan with oil on a medium high flame and cook the shrimps thoroughly on both sides for a minute and a half, till they start changing color.
In a small bowl mix the citrus juice and sparkling wine while in a comparatively bigger bowl add the shrimp, membranes and mint and toss it gently.
Take 4 separate glasses, divide the contents equally and pour the mixture of citrus juice and wine on top.
Serve cool and garnish with a little parsley or basil or mint leaves.
