Cold Sesame Noodles with Summer Vegetables

Cold Sesame Noodles with Summer Vegetables is a tasty lip-smacking vegetarian dish.


    Unseasoned rice vinegar: - 1/3 cup
    Vegetable oil: - 1/3 cup
    Hot chilli sauce: 1 tablespoon
    Sesame oil:  1 tablespoon
    Summer vegetables – 8 cups
    Kosher salt:  to taste
    Freshly ground pepper: as per taste
    Vermicelli noodles or any other Japanese noodles: 8 ounces
    Cilantro leaves:1 cup
    Sliced Scallions: 3
    White or black sesame seeds: 1 tablespoon

preparation method

Whisk Rice vinegar, vegetable oil, sesame oil and hot chilli sauce in a cooking bowl. Add summer vegetables like carrots, bell peppers, cucumbers and radishes. Toss the ingredients and season them with pepper and salt.
Cook the noodles as per the direction on the packet. Once cooked, drain the water and keep noodles aside under cold water. Drain the noodles again and pour in the pot with summer vegetables.
Put the cilantro leaves and scallions. Season with salt and pepper as per your taste.

Serving Suggestions

    Serve immediately,add sesame seeds on top of the noodles.
