We are cooking up a treat.
It will be served shortly...
Dry fig (anjeer) – 4 cups, cut in small pieces
Sugar (Cheeni) – 3 cups
Water – 3cups
Walnut (Akhrot) – ½ cup, chopped
Pine nuts (Chilgoza)- ¼ cup
Gelatin (Sares) – 1 tsp
Sesame (Til) seeds – 2 tbsp
Anis seed (saunf) powder – 1 tsp
Lemon juice (Nimboo ka ras) – 1 tbsp
In a pan, boil sugar and water, on high flame till it becomes syrup. Stir and add dry fig pieces carefully (syrup is very hot), followed by lemon juice. Boil on high flame for 5-6 minutes till it absorbs more than half the syrup.
Once the mixture thickens, add walnuts, pine nuts, anis powder, sesame seeds and mix (you can use cashew, almonds or any other nuts).
In a small saucepan, heat water. Add about 2-3 tbsp of the hot water to gelatin and mix to dissolve. Add this to the jam mixture and allow it to thicken. You can store it in a jar once it cools.
