French Onion Soup
French onion soup is generally prepared with beef stock and the sweetness of onions makes this soup delicious.
Large red or yellow onions, peeled and thinly sliced :- 6
Olive oil :- 1 tbsp.
Sugar :- ¼ tsp
Garlic cloves (minced) :- 2
Beef stock/chicken stock/combination of the two :- 8 cups
Dry white wine :- ½ cup
Bay leaf :- 1
Dry thyme :- ¼ tsp
Salt :- to taste
Pepper :- to taste
Toasted French bread :- 8 slices
Grated Swiss cheese with a little grated Parmesan cheese :- 1-1/2 cups
Casserole dish or serving bowl
In a large saucepan, heat olive oil on a medium flame and sauté the onions until lightly browned.
Now, mix the sugar to help with caramelization.
Put minced garlic and again sauté for two minutes.
Add the wine, stock, thyme and bay leaf. Partially cover and simmer for half an hour.
Season with pepper and salt. Stir well to mix.
Discard the bay leaf and then ladle the prepared soup into the casserole dish or serving bowl.
Keep this soup into a broiler at 350 F for about ten minutes.
Take out and serve immediately.
Serve hot in large casserole dish or individual oven-proof soup bowls.
