A delicious recipe for Jains to relish!
Bottle gourd (grated) :- 1 tbsp
Beans (boiled) :- 1 cup
Coriander leaves :- As required
Cashew nuts :- 10 ounces
Cumin powder :- Pinch
Coriander powder :- 1 tsp
Garam masala powder :- Pinch
Oil :- 1 tsp
Pumpkin (grated) :- 1 tbsp
Paneer :- 1 cup
Salt :- To taste
Red chili powder :- ½ tsp
Khoya (optional) :- 1 tbsp
Deep bottomed pan
Blend cashew nuts and set side.
In a pan, put oil, garam masala, pumpkin and bottle gourd. Sauté till it become brown in color.
Mix salt, red chili powder, cashew nuts paste, coriander and cumin powder in it. Cook for few minutes then pour tomato puree.
Cook for another few minutes and then pour water as needed. Cook until the gravy thickens.
Add beans, paneer or any vegetables as required. Combine well.
Combine coriander leaves, garam masala powder and khoya (optional). Mix well.
Garnish with chopped coriander leaves and serve it hot with roti or steamed rice.
