This melt-in-the mouth Indian sweet is a favorite for many occasions.


    All Purpose Flour :-  2 cups
    Rice flour :- 1-1/2 tbsp
    Baking powder :-  ¼ tsp
    Curd :- 2 tbsp

    Sugar :- 3 cups
    Water :-  2-1/2 cups
    Cardamom (powdered) :-  ½ tsp
    Ghee/Vegetable oil for frying

In a bowl, combine the rice flour, all purpose flour, curd and baking powder.

Pour water and whisk well until smooth. Keep aside for two hours.

Thoroughly whisk before use.

Dissolve sugar in the water to make one-string syrup and then mix cardamom powder in it. Stir well.

In a thick-bottomed pan, heat oil and pour the prepared batter in a steady stream into a pan to prepare coils. Make four at a time.

Deep-fry until crisp and golden.

Drain on kitchen towel and dip them in sugar syrup. Set aside for 10 minutes.

Take them out and serve hot.

Serving Suggestions

    Garnish with saffron strands and serve hot or at room temperature.
