Lemon Cheese Cake
Digestive Biscuits – 250 gm/ 2.5 cups,crumbled
Butter – 100gm/ 1/2 cup, melted
Cream Cheese - 1 cup/200gm
Condensed milk – 1 tin
Cream – 1 tin/170gm
Vanilla powder – 1 teaspoon
Lemon juice – 1 tablespoon
Gelatin powder – 10gm/ 1 tbsp, dissolved in 1/2 cup hot water OR white chocolate-melted
Combine biscuit & melted butter.
Press mixture into a bottom loose cake tin.
Place in fridge for 10 minutes.
Using a food processor, beat cream cheese, condensed milk, cream,vanilla powder & lemon juice until smooth.
Stir the melted gelatin or melted chocolate into the cream cheese mixture & spoon over the biscuit.
Place in the fridge for 2-3 hours until completely set.
Serve cut into pieces
