Lobster pizza is a crispy crust topped with moist lobster, cheese, tangy tomato ketchup and flavorful garlic butter.
Flour tortilla (10-inch shells-per pizza) :- 1
Butter :- 1 ounce
Grated fresh Parmesan cheese :- 2 tbsp
Drained tomatoes (diced 3/8-inch) :- 3
Fresh basil (cut in 1/8-inch julienne strips) :- 2 tbsp
Lobster meat (cut in 1/2-inch - 3/4-inch chunks) :- 2 ounces
Cheese (shredded) :- ½ cup
Ground black pepper :- ½ tsp
Heat microwave to 450 degrees.
Brush complete upper portion of tortilla with garlic butter.
Spread Parmesan cheese on top of the garlic butter.
After draining the tomatoes, evenly spread it over Parmesan.
To julienne the basil, first wash it and then shake off extra water.
Now, pick off leaves and stack on one another. Make 1/8-inch strips but do not cut them.
Evenly sprinkle over the drained tomatoes.
Cut lobster meat into ½-inch-3/4-inch chunks and then portion it. Drain and then evenly sprinkle over the tomatoes.
Evenly spread the cheese blend on top of the diced tomatoes.
Keep it in a fridge till ready to cook.
Lightly brush vegetable oil over pizza pan and sprinkle kosher salt and black pepper.
When pan is ready, keep pizza on it and cook for five minutes.
Transfer from pan to a serving dish and make 8 wedges.
Spread lime juice over pizza for an additional flavor.
Serve hot as an appetizer or snack with sauce.
