Malai Kofta

ingredients

    For Kofta

    ½ cup aloo(potatoes)- boiled

    4tbspcornflour

    ½ cup paneer- crumbled

    4-5 kaju (cashew nuts)- chopped

    1 tbsp raisins

    2-3 harimirch (green chillies)- chopped

    ¼ tspshakkar (sugar)

    1 tspdhania(coriander) powder

    1 tspjeera (cumin)powder

    1 tsplalmirch(red chilli) powder

    Oil for frying the kofta

    For the gravy

    3 tbsp oil

    2 medium pyaaz(onion)- chopped

    3 flakes lasun(garlic)-crushed

    1 inch adrak(ginger)-crushed

    2 tspkhuskhus (poppy seeds)- powdered

    3 large tamatar(tomatoes)-pureed

    1 tsplalmirch(red chili) powder

    ½ tspgaram masala

    ½ tspjeera(cumin) powdered

    1 tbspmungfali(ground peanuts)

    2 tbspmalai

    1 tspdhania(coriander)-chopped for garnish

preparation method

Peel, mash and add salt to potatoes. Also add 2-3 tbsp of cornflour and mix

Keep aside

Mix all the ingredients for the kofta into a paste

Make rounds of the dough and place a little of the prepared paneer mixture in the center of each potato round

Seal the edges and shape into stuffed kofta. Deep fry each kofta till golden brown. Drain and keep aside

Blend together onions, ginger, garlic and poppy seeds and fry in 3 tbsp of oil till brown and the oil begins to separate

Add the pureed tomatoes and the masala powders

Add the ground peanuts

The gravy will begin to thicken

You can also add some malai to thicken it some more

Mix in some water if necessary

When the gravy comes to boil, add the koftas

Heat through and serve the malai kofta

Do not over cook it.

Remove and garnish it with chopped coriander
