Mexican Chicken

Enjoy this low fat quick and authentic Mexican chicken.

ingredients

    Boneless chicken breast halves :- 6
    Salsa :- 1 jar (20 ounce)

    Lemon juice :- 2 tbsp

    Ground cumin :- 2 tbsp
    Red bell pepper :- 1 large (chopped)
    Black beans :- 2 cans (15 ounce)
    Chili powder :- 2 tbsp
    Garlic :- 3 cloves (crushed)

preparation method

Heat the oven to about 205 degree C.

Take the chicken pieces and arrange them in a casserole or a 9”x13" baking dish.

Now mix the red bell pepper, lemon juice, cumin, salsa, garlic and chili powder together.

Add this mixture to the chicken.

Now transfer the black beans over this and cover it with a lid.

Bake this preparation in the oven for about 1 ½ hours and serve it hot.

Serving Suggestions

    Serve it hot with rice or noodles.
