Miso Mashed Potatoes
Miso Mashed Potatoes is a healthy vegan breakfast made from smooth and creamy mashed potato with savory flavor.
Red Potatoes:– 2 pounds (scrubbed)
Butter: – 2 tablespoons
Miso paste: – 2 tablespoons
Milk: – 2 tablespoons
Parsley:– 2 teaspoons (minced)
Add peeled potatoes in a large cooking pot filled with water. As the water starts boiling, turn the flame to medium and cook the potatoes for an additional 20 minutes.
Take fork and pierce the potatoes, if the fork inserts the potatoes smoothly then turn off the flame.
Drain the water with the potatoes in the cooking pot.
One by one mash the potatoes with a potato masher.
Add Miso paste, milk and butter and whisk the condiments.
Sprinkle parsley over the mashed potatoes for dressing.
