Mixed Veggies and Dal Stew


    1 cup split pigeon pea (toor dal), soaked

    ½ cup chopped carrots

    ½ cup corn kernels, boiled and crushed

    ½ cup chopped onion

    1 tsp chopped garlic

    1 tbsp chopped celery

    1 tbsp oil

    1 tbsp tomato sauce

    Salt to taste

    A pinch of oregano

preparation method

  1. Heat oil in a deep non-stick pan. Add onion, garlic, celery, carrots and corn. Mix and sauté till vegetables are soft.
  2. Add tomato sauce and mix well.
  3. Add pigeon pea, salt, oregano and 4 cups water, stir to mix and cook on medium heat for 20-25 minutes.

Serving Suggestions

    Serve hot with garlic bread.
