Mutton Saoji


    1 Caraway seeds 1 ½ tsp
    2 Oil 2-4 tbsp
    3 Coriander seeds 1 tsp
    4 Green cardamom 6-7 nos
    5 Black pepper 12 -15
    6 Cloves 1 tsp
    7 Black cardamom 2 nos
    8 Stone flower 3-4 sprigs
    9 Cinnamon 1 stick
    10 Bay leaf 3 nos
    11 Dry red chillies 7-8 nos
    12 Dry coconut 2 tbsp
    13 Onion 1 ½
    14 Poppy seeds 2 tsp
    15 Mutton 500 gms
    16 Garlic paste 1 tbsp
    17 Ginger paste 1 tbsp
    18 Salt To taste
    19 Oil 1 tbsp
    20 Green chilli 4 nos

preparation method

Heat oil in a pan and add caraway seeds, coriander seeds and let it pop and add green cardamom,black pepper, cloves, black cardamom, stone flower, cinnamon, bay leaf, dry red chillies, dry coconut, sliced onion and toss it, poppy seeds and sauté.
When it is sauted add little bit of water and transfer it in to a grinder and make a paste of it.
Take mutton in a bowl and add ginger- garlic paste and salt and mix it well and keep it for marination.
Heat oil in a pan and add green chillies, grinded paste and marinated mutton, little bit of water and transfer it to a cooker and cook it for 2-3 whistles, once cooked again transfer it into a pan and add salt to taste.
Finally take it out in a serving bowl and garnish it and serve hot.
