Pineapple Muffins

Pineapple Muffins contains a wonderful sweet flavor with delicious crumbly topping too.


    All purpose flour  :- 2 cups
    White sugar  :- ½ cup
    Salt  :- ½ tsp
    Baking powder  :- 1 tbsp
    Egg (beaten) :- 1
    Crushed pineapple  :- 1 can (8 ounce)
    Butter (melted) :- ¼ cup
    Milk :- ¾ cup
    Ground cinnamon  :- ¼ tsp
    All purpose flour  :- ½ cup
    Packed brown sugar  :- 1/3 cup
    Butter (melted)  :- ¼ cup

preparation method

Preheat the microwave to 375 degrees F/190 degrees C. First, grease and then flour muffin pans or you can line these muffin pans with paper liners.
In the bowl, stir baking powder, two cups of flour, salt and white sugar together. Drain together reserving 1/4 cup juice, pineapple. Prepare a well in the middle of the dry ingredients, and then pour in the egg, reserved juice, 1/4 cup of melted butter and milk. Combine well till blended.
In another vessel, stir the half cup of flour, cinnamon, 1/4 cup of melted butter and brown sugar together to prepare the garnishing.
Pour prepared batter into muffin cups and put smashed pineapple on a batter. Sprinkle with cinnamon topping.
Now bake for about half an hour in a preheated microwave, till a toothpick inserted in the middle of the muffins comes out totally clean.
