Potato Galette with Morel Mushrooms

ingredients

    1 Morel mushrooms 4 tbsp
    2 Potatoes 4 cups
    3 Leeks 2 cups
    4 Cheddar cheese 2 cups
    5 Borges light olive oil 4 tbsp
    6 Garlic 1 tsp
    7 Red wine 1 tsp
    8 Cream 1 tbsp

preparation method

METHOD:

 

  • Sauté chopped garlic in light olive oil in a pan
  • Next, add morel mushrooms into the pan
  • Pour red wine to moisten the mushrooms
  • After the red wine mixture reduces, add remaining and reduce completely
  • Finish up the sauce with a dash of fresh cream
  • For the galette – peel and slice the par-boiled potatoes and keep aside
  • Cut the leeks into thin julliennes and add to the shredded potaotes
  • Add grated cheddar cheese to this. Mix well and keep aside
  • Heat a pan with light olive oil and cook the galette like a pancake
  • Finally serve the galette with morel garnish, morel foam and cream sauce
