Sesame Noodles with Peanut Sauce

ingredients

    Noodles - 200 gms/ 1 packet, cooked as per instructions on pack

    Sesame (Til)oil – 3 tbsp

    Salt – 1 tsp or to taste

    To make peanut sauce:

    Ginger (Adrak) – 1 big piece finely sliced lengthways

    Garlic (Lehsun) – 3 cloves, finely chopped

    Green onions (Hare pyaaz) – 3 finely chopped

    Chilli flakes/ dried red chillies (Sukhi Lal Mirch) ground – ½ tsp

    Soya sauce – ¼ cup

    Sugar (Cheeni) – 2 tbsp

    Peanuts (Moongphali) – 1 cup, roasted and ground

    To garnish:

    Sesame seeds (Til) – 1 tbsp, roasted

    Green onions (Hare Pyaaz) – 1tbsp, finely chopped

    Peanuts (Moongphali)  – 1 tbsp, roasted and ground

preparation method

Step 1 - Grind garlic, ginger and green onions first, in a mixer. Then add chilli flakes, soya sauce, sugar and peanuts and grind all together to make a smooth paste. (To ensure, that all ingredients become a proper paste and mix well, blending is done step-wise).This is called peanut sauce.

Step 2 – In a wok, heat 2 tbsp of til oil and add noodles. Stir without breaking the noodles. Add the base sauce or peanut sauce and mix well.

Step 3 – Add salt and cook the noodles in the sauce. Garnish with green onions, sesame, peanuts and serve.
