Sticky Sweet Rice Pudding


    Ukda rice/ sweet rice (Ukda/Meethe chawal) – 1 cup (cooked in water & 2 tsp coconut powder to give it a slight brown appearance)

    Coconut milk (Nariyal ka Doodh) – 1/2 cup/ can

    Brown sugar (Bhuri cheeni) /Jaggery (Gur) – 1 tbsp

    Grated coconut (Nariyal) – 1 tbsp

    To make coconut sauce:

    Coconut milk (Nariyal ka Doodh) – 1/2 cup/ can

    Brown sugar (Bhuri cheeni) / Jaggery (Gur) – ¼ cup

    Vanilla essence – 1 tsp

    Grated coconut (Nariyal) – 2 tbsp

    Corn flour (Makkai ka aata) – 2 tsp, optional

    Salt – ½ tsp or to taste

    To Decorate:

    Grated coconut (Nariyal) – 2 tsp

preparation method

Step 1 – In a pan, add rice and pour coconut milk. Add 1 tbsp brown sugar, 1 tbsp grated coconut and a pinch of salt. Mix well.

Step 2 – In a separate prepare coconut sauce by pouring ¾ cup remaining coconut milk and adding ¼ cup brown sugar. Mix it and add vanilla essence, 2 tbsp grated coconut and allow it to boil.

Step 3 – To serve, in pudding bowls first put rice and then pour sauce on top. Decorate with remaining grated coconut.
