Stuffed Karela Fry
Stuffed karela fry is spicy yet delicious recipe which is easy to prepare.
Amchoor powder:- 1 tbsp
Besan (bengal gram flour):- 1 tbsp
Bitter gourd:- 8
Chili powder:- 1 pinch
Coriander leaves:- 1 springs
Cumin seeds:- 1 tsp
Fennel (optional):- 1 pinch
Ginger garlic paste:- 1 tbsp
Mustard oil:- 2 tbsp
Oil:- 2 tbsp
Salt:- to taste
Sugar or jaggery:- to taste
Deep bottomed pan
Slit gourds only from one side and deseed it, then chop.
In a deep bottomed pan, heat oil and put cumin seeds and onion. Fry until transparent.
Put besan flour and turmeric powder into it. Cook until nice aroma of roasted besan emanates.
Mix chili powder and garlic-ginger paste into it. Stir well.
Combine chopped bitter melon seeds. Mix well and let it cook.
Add amchur powder and sauté over low heat.
Put coriander leaves and small amount of jaggery/sugar.
Fill this cooked mixture in a bitter melon and then tie the karela tightly so that the mixture remains inside at the time of cooking.
Put mustard oil and shallow fry over medium flame until done.
Serve hot with roti.
