Suji Halwa is a very famous sweet dish popular across India and generally made on religious occasions.
Sooji/rava/semolina flour :-½ cup
Ghee :-¼ cup
Water :- 1-1/2 cup
Sugar :- 1/3 cup
Cardamom powder :- Pinch
Sliced almonds for garnishing :- 1 tbsp.
Boil the water with cardamom powder and sugar in a deep bottomed pan over medium flame. Keep aside.
In a non-stick pan, melt the ghee on medium flame.
Once pan becomes hot, put sooji and then roast it until it turns golden brown. Stir constantly.
Slowly add the prepared sugar syrup and stir well.
Allow it to cook for three minutes on medium low flame.
Sooji will absorb the complete water as the Halwa cools, so always make a Halwa little softer then you require.
Garnish with shaved pistachio, kesar,shredded coconut or few grated almond pieces. Pour the Halwa on a greased plate, keep it half inch thick. Garnish with dryfruits and allow it to cool for 30 minutes. Cut the Halwa in diamond or square shapes.
