Tomato Soup with a Twist


    Tomatoes :- 350 gms

    Garlic cloves

    Basil leaves

    Salt :- to taste

    Black pepper powder

    Olive Oil

    Tomato puree :- 100 gms

    Potato :- 1 boiled


    Water :- 2-3 cups

preparation method

Blanch the tomatoes – for this , remove the eye of the tomato , put a cross on the other side , and now boil these tomatoes for 1 minute. Remove the tomatoes into a bowl laden with crushed ice and cold water. Now peel the tomatoes and cut them into halves. Now remove the seeds inside the tomatoes by squeezing them. Now grease a baking tray with olive oil and place the tomato halves in it. Put one garlic clove each and a basil leaf each on the tomato and bake in a preheated oven at 170 *C for 10-15 minutes. Now in a wok, add 1 cup tomato puree and water and let it boil. Add 1 boiled mashed potato and stir so that there are no lumps . Ass 1 tsp black pepper powder, salt to taste and 1 tsp sugar. Remove the baked tomatoes ; and add them in a grinder , adding a little water to grind. Now pour this grinded mixture in the wok , add a little water and again bring to a boil . Now , strain this into a separate pan and bowl and strain it. Boiling this mizture onw more time , remove into a bowl and serve hot , garnishing with a crouton and a basil leaf.
