Tortilla Rolls


    2 tbsp olive oil

    1/2 pyaaz (onion)-chopped

    2 clove slasan( garlic)-minced

    1/2 cup goochi(mushroom)-sliced

    ½ peela shimla mirch(yellow bell pepper)-optional

    1shimla mirch(green bell pepper)-sliced

    ½ lal shimla mirch(red bell pepper)-optional

    2 medium zucchini or tori

    1 tbsp soy sauce

    1/2 tsp jeera(cumin)

    3/4 tsp chili powder

    1/2 tsp degi mirch powder

    6-8 whole wheat tortillas

    taco toppings: shredded lettuce, diced tomatoes, sour cream, processed cheese, salsa (tomato, coriander, chilli), etc.

preparation method

Saute onion and garlic for a few minutes, then add mushrooms, bell pepper, and zucchini and cook until soft, about 4-5 minutes.

Add soy sauce, cumin, chili powder and desi mirch, stirring to combine well, and heat for another minute or two.

Fill up corn tortillas with veggie mixture, add cheese, lettuce, tomatoes. Roll and serve with salsa
