Vegetable Soft Tacos
2 tbsp olive oil
2 cloveslasan( garlic)-minced
1/2 cup goochi(mushroom)-sliced
½ peelashimlamirch(yellow bell pepper)-optional
1shimla mirch(green bell pepper)-sliced
½ lalshimlamirch(red bell pepper)-optional
2 medium zucchini or tori
1 tbsp soy sauce
3/4 tsp chili powder
6-8 whole wheat tortillas
taco toppings: shredded lettuce, diced tomatoes, sour cream, processed cheese, salsa(tomato, coriander, chilli), etc.
Sautee onion and garlic for a few minutes, then add mushrooms, bell pepper, and zucchini and cook until soft, about 4-5 minutes.
Add soy sauce, cumin, chili powder anddesimirch, stirring to combine well, and heat for another minute or two.
Fill up corn tortillas with veggie mixture, add cheese, lettuce, tomatoes. Roll and serve with salsa
