Yam Frankie


    500 gm. yam
    2 tbsp mustard oil
    1 tsp. cumin seeds
    A large pinch of hing
    3tbsp besan
    1/2 tsp. haldi
    11/2 tsp. coriander powder
    1 tsp. chilli powder
    Salt to taste
    2 tsp. dry mango powder or amchur
    1 tsp. Garam Masala
    Onion – 1
    Mint Chutney – 3 tbsp
    Readymade big chapatti’s

preparation method

Wear gloves when handling yam
Cut it into thick slices
Place in a pan of water and boil until semi-soft. You can steam it, if you have a steamer. you have a pressure cooker, give it one pressure.
Drain water off in a colander and keep the yam aside.
Heat oil in a deep frying pan.
Add cumin seeds and asafoetida powder, seeds ko splutter karne do – like this ya brown hone do
Add besan flour and stir in. It will bubble up. Fry for a few seconds, you will get an aroma of roasting besan. Turn heat down.
Stir in all spices and salt.
Stir the yam covering all pieces with the besan and spice mix.
Cook on medium to low heat. After a few minutes, press each piece flat and let it fry crisp on the both sides. If your heat is high, the pieces will not get crisp but they will burn.
Now spread mint chutney. Now place yam on one end of chapatti, top it with sliced onions. Roll it tightly. The roll is ready!
