250 gms purple yam
200 gms double cream
½ cup sugar
1 tsp fennel seeds
1 cup hazelnuts
1 cup water
Vermicelli sticks to garnish
Take some boiled yam in a mixer and add water in it. Make a paste of this yam.
Put some cream in a pan and add yam paste in it.
Add some roasted fennel seeds in this mixture.
Now add some sugar and boil this mixture.
Then caramelize hazelnuts in a pan.
Dress the brim of the glasses with the caramelized hazelnuts.
Transfer the mousse in these glasses.
Put some caramelized hazelnuts on top of this mousse.
Dress this with vermicelli sticks.
Put this yam mousse in the refrigerator to chill.
