Easy to make and easy on the palate, this dish is worth making often


  • Potatoes, boiled, peeled and diced 1 cup
  • Cauliflower (gobhi) florets, boiled 1 cup
  • Fresh fenugreek leaves (methi), chopped 1 medium bunch
  • Oil 1 tbsp
  • Garlic, sliced 1 tbsp
  • Mustard seeds 1 tsp
  • Onions, sliced ½ cup
  • Tomatoes, sliced ½ cup
  • Cumin powder 1 tsp
  • Turmeric powder ½ tsp
  • Red chilli powder 1 tsp
  • Salt to taste


  • Heat oil in a non-stick pan over medium heat, add garlic and saute till light golden. Add mustard seeds and saute till they splutter.
  • Add onions, tomatoes and cumin seeds and saute to till tomatoes become pulpy. Add red chilli powder and saute for 1 minute.
  • Add potatoes, cauliflower, fenugreek leaves and salt and mix well. Add ¼ cup water and cook till dry.
  • Transfer into a serving bowl and serve hot with rotis or paranthas.
