Emerald green soup that has the goodness of broccoli


  • Broccoli, separated into florets 600 gms
  • Olive oil 1 tbsp
  • Large onion, chopped 1
  • Garlic cloves, chopped 3
  • Medium potato, peeled and chopped 1
  • Chicken broth 4 cups
  • Nutmeg powder ΒΌ tsp
  • Salt to taste
  • Black pepper powder to taste


  • Heat olive oil in a large non-stick pan, add onion and garlic and saute till they become soft.
  • Add broccoli, potato and chicken broth and mix well. Once the mixture comes to a boil, reduce heat, and simmer for 15 minutes, or till the vegetables are tender.
  • Blend with a hand blender till smooth. Add nutmeg powder, salt and pepper powder and mix well. Bring to a boil again.
  • Transfer into a serving bowl and serve piping hot.
