The sweetness of carrots tones down the slight bitterness of fenugreek leaves


  • Carrots, peeled and cubed 2 cups
  • Fresh fenugreek leaves (methi), chopped 2 cups
  • Oil 2 tsps
  • Cumin seeds ½ tsp
  • Onions, chopped ½ cup
  • Green chillies, finely chopped 3 to 4
  • Large garlic, finely chopped 1
  • Ginger, finely chopped ½ tsp
  • Turmeric powder ¼ tsp
  • Coriander powder 2 tsps
  • Salt to taste


  • Heat oil in a non-stick pan, add cumin seeds and let them change colour. Add onions, green chillies, garlic and ginger, mix and saute for 2 minutes.
  • Add fenugreek leaves and saute for 2 more minutes.
  • Add carrots, turmeric powder, coriander powder, salt and 1 cup water and mix. Cook on low heat till the carrots are cooked and all the moisure is absorbed.
  • Transfer into a serving bowl and serve hot.
