Fresh Lemongrass and Ginger Ale
If you like lemon tea, then experience the taste of this light and healthy drink.
Ginger sliced in thin pieces :- 1
Lemongrass :- 3 outer leaves discarded, 6” inches rough in 1/2”sections
Sugar :- 1 ¾ cups
Water :- 1 ¼ quarts
In a food processor, blend ginger and lemon grass to form a puree of consistent texture. To avoid the ingredients to stick to the walls of the mixer, keep scrapping off the excess ingredients while blending. Place a saucepan on a high flame; add sugar, water and the mixture of lemongrass/ginger and stir continuously. Boil the mixture and then once the mixture has boiled, allow it to simmer uncovered for 15 minutes till the desired consistency is not achieved. Pass the mixture through a sieve to remove any lumps or pulp that was formed during the process. Chill the mixture. In tall glasses add ice cubes and some chilled water. Pour the syrup on top to achieve the balance of sweetness and finally add the soda or gin to finish off.
Serve cool and garnish with a little parsley or basil or mint leaves.
