Shrimp and Mushroom Curry
Shrimp and Mushroom Curry is light and healthy curry which you would love to taste.
Cooking oil: 1 teaspoon
Red curry paste: 2tablespoons
Coconut milk: 12 ounces
Red bell pepper cut into strips: 1
Fresh mushrooms: 8 ounces
Shrimp, deveined and cleaned: 1 pound
Basil leaves: 16
Place a pan on a medium flame and add oil to the pan along with red curry paste. Beat the mixture continuously for 30 seconds. Slowly and gradually add the coconut milk and whisk the mixture to avoid lumps. When the mixture starts simmering, add the red bell peppers and mushrooms and allow the contents to cook for 3 minutes or so. Taste and add more curry paste if the need arises. Lastly add the shrimp and cook the contents for 2-3 minutes so that the shrimp become succulent and juice. Serve with basil leaves on the top as garnish.
Serve immediately along with steamed rice.
