In Bhindi Achaari recipe,ladies fingers are cooked with achar masala and tamarind water.
Bhindi:- 500 gm
Red chili powder:- ½ tsp.
Ginger paste :- 1 tsp.
Dried mango powder :- ½ tsp.
Coriander powder:- 1 tsp.
Garam masala:- ½ tsp.
Lemon juice:- 1 tsp.
Salt:- To taste
Ingredientsfor Achari masala
Hing (asafoetida):- Pinch
Saunf (fennel seeds):- 1tsp.
Rye (round mustard seeds):- ½ tsp.
Kalonji (black onion seeds):- ½ tsp.
Wash bhindis and wipe dry. Then vertically chop them.
Place the chopped bhindi on an oven dish and sprinkle around two tbsp.. oil on it.Combine well and keep them in an oven till cooked.
In a separate plate, combine the achari flavors and 2 tsp. oil together. Microwave for about three minutes.
Add the red chili powder, achari flavors, coriander powder, salt, mango powder, ginger paste, lemon juice and the tomatoes to the bhindi.
Mix and microwave for another few minutes.
Serve hot with dal rice or rotis.
