Spiced Raisin Mini Muffins

Delectable damp muffins to relish in the rainy weather

ingredients

    Sugar, 1 cup

    Chopped raisins, 1 cup

    Water, 1 cup

    Butter or margarine, 1/2 cup

    Ground cinnamon, 1 teaspoon

    Ground cloves, 1/2 teaspoon

    All-purpose flour, 2 cups

    Baking soda, 1 teaspoon

    Salt, 1/2 teaspoon

    Chopped walnuts, 1 cup

    Glaze:

    Confectioners' sugar, 1 cup

    Vanilla extract, 1/2 teaspoon

    Milk, 1 tablespoon

Mix together the first six contents mentioned in a saucepan. Now boil it over medium flame and keep stirring in regular intervals.  Remove from the flame and allow it cool at room temperature. Mix salt, baking soda and flour in a bowl. Put the raisin mixture and stir well and add walnuts. Now fill paper-line small muffin cups and ensure they are filled at least 2/3. In an oven, bake the mix at 350 degrees F for around fifteen minutes till the toothpick clearly comes out. Let it cool for around five minutes and remove from the pan and keep it on the wire racks. Mix together confectioner’s sugar, milk, vanilla and achieve the firmness for the glaze. Now sprinkle over the muffins.
