Caribbean Fruity Salsa
Caribbean Fruity Salsa is easy to prepare and tastes simply delicious. It goes perfect with crunchy tortilla chips or yogurt. It makes for a nutritious breakfast recipe as well.
1 cup diced fresh mango
1/2 cup diced fresh pineapple
1/2 cup diced papaya
1 fresh jalapeno pepper, seeded and minced
1/2 medium red onion, finely diced
3 tablespoons lime juice
1 tablespoon olive oil
1 teaspoon salt, or to taste
1 tablespoon chopped fresh mint
Mix together red onion, jalapeno pepper, papaya, pineapple and mango in a mixing bowl. Stir olive oil and lime juice in the mixture. Zest it with salt and keep stirring to mix well. Drizzle with cut mint leaves before you serve.
Serve with yogurt, granola or crispy tortilla chips.
