Minestrone Soup

This recipe for vegetarian and vegan minestrone soup is filled with healthy and low-fat vegetables, and slowly simmered for maximum flavor.


    Olive oil :- 2 tbsp

    Finely chopped :- 1 garlic

    Onion chopped :- 1/4 cup

    Handful of chopped carrots, potato, celery with leaves, cabbage :- 1 Cup

    Green beans, or any beans of your choice :- ½ Cup

    Tomato sauce or tomato paste or fresh tomato :- 1 cup

    Chana Dal :- 1/4 Cup

    Salt and pepper for taste

    Chopped Green Chillies

preparation method

Cook the Dal, in about 10 mins add all the veggies, cook for 5-6 mins till Dal and veggies are soft.

In a pan take olive oil, add garlic chopped, chopped ginger, roughly chopped dry red chillies, cumin and mustard seeds and curry leaves, a little turmeric and the cooked dal and veggies mixture.

Let it simmer for 5 minutes.

Serve it hot.
