Thai Peanut Sauce
This delicious sauce can be used as a dip with kebabs or you can make a whole chicken dish out of this and serve it with hot pita bread. Yum!
1 cup dry roasted peanuts, without salt
1/3 cup water
2 garlic cloves well minced
½ tsp dark soy sauce
2 tsp sesame oil
1 tbs brown sugar, to taste
2 ½ tbs regular soy sauce
2 tbs lime juice
1 tspThai chilli sauce
1/3 cup coconut milk
250g chicken breasts (washed and cut)
Blender/ Food Processor
This is an extremely simple recipe. Take all the ingredients and chuck them into a blender or food processor. The sauce needs to be smooth and thick.
For those who like runny sauce, you can always add extra coconut milk.
The important thing with this sauce is to taste it.
If it’s not pea nutty, you can add some more peanuts.
Check the salt. If it is less, add some more soy sauce. If you like it spicy, add some chilli sauce. If you like it sweet, add some sugar.
Once the tasting is done and you are satisfied with it, simply serve it at room temperature with your kebabs or cook the chicken in it.
Serve with chicken satay or other kebabs
