Fluffy Gluten Free Cornbread

This fluffy cornbread is light and easy to make and is mouthwatering when presented.


    2 eggs, half beaten

    Lukewarm water, 1 1/2 cups

    Vegetable oil, 1/4 cup

    Fine cornmeal, 1 1/2 cups

    Millet flour, 1 cup

    Rice flour, 1 cup

    White sugar, 1/4 cup

    Baking powder, 1 tablespoon

    Salt, 1 teaspoon

preparation method

First heat oven to 200 degrees C. Oil a 9 by 9 inch baking pan. Beat together vegetable oil, water and eggs in bowl and blend well. Keep it aside. Add salt, baking powder, sugar, rice flour, millet flour and cornmeal in another bowl and make a big hole in the center of the mixture. Put the liquid mix inside this well and keep stirring till it is properly mixed. Empty this batter into the oiled baking pan and bake it in the heated oven till the top bounces back when pressed lightly and it is slightly golden.
