Karnataka Style Poha

ingredients

    2 cups Poha
    1 cup finely chopped onion
    1 cup finely chopped carrots
    50 gm Peas
    1 tsp channa dal
    1 tsp white urad dal
    1/2 tsp turmeric powder
    1/2 tsp Hing
    1 tbsp Vangi Bhat powder
    1 tbsp oil
    1/2 tsp mustard seeds
    salt to taste
    1/3 cup grated coconut
    3 tsp lemon juice
    coriander leaves
    5 - 6 curry leaves

preparation method

Wash the poha under water. After the wash, allow it to rest for about 10 minutes so that it gets softened. Heat oil in a heavy bottomed pan; add in the mustard seeds and allow it to crackle. Stir in the channa and urad dal and roast them until they turn brown. Stir in the chopped onions, carrots, peas and curry leaves. Sprinkle some water and cover the pan and. Simmer on low heat until the carrots are cooked, for about 4 minutes.
Put in the turmeric powder and hing and sauté for a few seconds.
Finally add the poha, salt and Vangi Bhat spice mixture. Combine well, cover the pan and simmer for a few more minutes. Finally stir in the lemon juice, coconut and coriander leaves and serve hot.
