Lauki Dal Fry
Lauki dal fry is a delicious combination of lauki and lentils. You can serve with steamed rice or roti.
Masoor dal (washed and soaked for 30 minutes):- 2 tbsp
Moong dal (washed and soaked for 30 minutes):- 3/4 cup
Lauki (bottle gourd-grated):- 1-1/2 cup
Salt:- to taste
Turmeric powder:- 1/4 tsp
Lime squeeze:- 1 tsp
Garlic cloves (crushed):- 4
Tomato (seeded and chopped):- 1
Garlic (grated):- 1 tbsp
Mint leaves (chopped):- 3 tbsp
Onion (chopped):- 1
Deep bottomed pan
Cook dal, tomato, garlic, cloves, ginger, mint leaves, onion, salt and turmeric powder together in four cups of water over medium heat.
After five minutes, put lauki and allow it to cook until lauki and dal are completely tender.
Add lime squeeze and switch off the heat.
In a pan, heat oil and put mustard seeds.
Combine curry leaves, coriander seeds, broken red and green chili, and cumin seeds to it. Stir-fry until crisp.
In another pan, heat 2 tbsp. of oil and put mustard seeds, cumin seeds, coriander seeds, broken red chili, slit green chilies and curry leaves. Fry well. Tempering is ready.
Pour this hot tempering in dal and combine well.
Garnish with chopped coriander and serve hot.
Serve hot with steamed rice or roti.
