Avocado Pasta


    6 oz/170g Wheat pasta
    1 large ripe avocado, pitted and peel removed
    1 tablespoon lime juice
    1 clove garlic, minced
    1/4 cup chopped fresh cilantro (fresh coriander)
    1/2 teaspoon kosher salt (or quality sea salt)
    Freshly ground black pepper, to taste

preparation method

1.Process the ingredients until smooth and creamy.
2.Scrape the sauce out of the blender or food processor with a spatula. Put it into a medium-sized bowl.
3.Cover the bowl with plastic wrap to prevent the avocado from turning brown too quickly. Set it aside while you prepare your pasta.
1.Place a colander in the sink. Drain the water from the pasta.
2.Uncover the bowl containing the avocado sauce while the pasta is draining.
3.Add the pasta to the avocado sauce and mix it together thoroughly.
4.Serve the dish immediately. Serve with fresh rolls and a salad, if desired.
