Healthy Hash Browns

Hash browns with bacon, capsicum and onion – healthy breakfast option

ingredients

    Potatoes peeled – half a kilo

    Vegetable oil ½ tbsp

    Bacon (with rinds cut off and chopped)

    1 onion chopped

    Half a capsicum, deseeded

    ¼ tspchilli powder

    Salt and pepper

preparation method

Place the potatoes in a bowl of iced water. Grate them and keep them in the bowl again.

In a frying pan, sauté the bacon till they it becomes golden brown. Add the cut onion and capsicum to the pan and cook till they become soft. Keep all this aside.

Remove the grated potatoes. Squeeze out as much water from them as possible. If required place them on a paper towel and dry them. Mix the grated potatoes with bacon, onion, capsicum. Add fresh pepper powder and chilli powder and mix well.

With the remaining oil fry the potato mixture without stirring till it is golden brown. When crispy below, turn over the potato cake.

Cut into even pieces and serve hot after both sides have been browned.
