White Bean Soup
A delicious Mediterranean soup that tastes even better the next day!
White beans (soaked overnight) :- 2 pound
Baking soda :- 1 pinch
Spring onions:- 4
Butter :- 2 tbsp
Basic meat broth :- 1 cup
Salt:- 1 tsp
In a pot of boiling water, cook the soaked beans for at least half an hour and then drain.
In hot melted butter, sauté the spring onions and put cooked beans, salt and chicken broth in it.
Allow this mixture to boil and cover with lid.
Simmer until meat broth is tender, about 30 minutes.
Blend or sieve into a puree or just keep as it is.
Add salt and stir well to mix.
Garnish with chopped coriander and serve hot.
